Pav Bhaji : Indian Food & Cooking Recipes

8 pavs [squarish soft buns about 4" x 5" size)
Ghee or butter to fry.
2 potatoes ( boiled & smashed )
1 cup onions
1 cup tomatoes
1 cup capsicum
2 cloves garlic,1" ginger & 1 green chilly ( grinded )
2 tsp white chutney
2 tsp red chilly pd
1/2 tsp turmeric pd
2-3 tsp pav bhaji masala
Salt to taste
Grind coconut & chickpeas to make chutney.

Cooking Instructions
Take 3 tsp of oil or ghee in a pan. Add cumin & mustard seeds. Then add bay leaves. Then add the garlic paste & add the onions. Fry for a while. Then add the capsicums & keep frying. After 2-3 min's add the tomatoes & mix well. Then add the chutney add mix well. Add ghee (if necessary) to avoid sticking to the pan. Then add the smashed potatoes & mix well. Then add all the dry masalas & water to make gravy. Keep frying on a simmer flame & smash all the vegetables to make a thick paste. The bhaji is ready to serve with the pav.
Slit pavs horizontally leaving one edge attached. (To open like a book).Apply butter (as desired) and roast open on tava till hot and soft with the surface crisp on both sides.Serve hot with bhaji, a piece of lemon and chopped onions.
